Ackawi (also spelled Akawi, Akkawi, Akawieh, or Ackawi) is a Middle Eastern cheese named after the Aker area of Palestine, in which it first originated. It is tender unripened brine cheese with a chewy, easy consistency and a completely mild, slightly salty flavor.
